1.) Asian Fish Cakes

Prepare the following ingredients:

2 lb cod fillets, cut into 1 inch

2 large eggs

½ cup panko bread crumbs, 1 cup for dredging

¼ cup finely chopped fresh cilantro

4 green onions

2 tbsp peeled and grated fresh ginger

1 tbsp lime zest

2 cloves garlic

½ tsp fish sauce

2 tsp kosher salt

1 tsp freshly ground pepper

Vegetable oil for frying

Instructions:

  • Ground the fish into a food processor do not over process the fish it might turn into a paste. In a large bowl transfer the ground fish and add the eggs, ½ cup bread crumbs, cilantro, green onions, ginger, lime zest, fish sauce, salt and pepper. Mix them well.
  • Using your hands form the mixture into small pieces or simply roll them into your palms.
  • Pan-fry the mixture do not overcook it.
  • Transfer the fish cakes to your plates with some kitchen tissue to drip

2.) Kale Chips

Ingredients:

1 bowl of kale

2 large eggs

1 cup of flour

½ tsp salt and pepper

Vegetable oil

Instruction:

  • After washing the kales dry them each using a clean towel
  • Mix 2 large eggs with salt and pepper
  • One at a time, dip each kale into the egg mixture
  • In another bowl, place the flour and after dipping the kales into the egg mixture put it in the bowl flour
  • Do not put too much flour
  • Pan-fry it do not overcook just wait until it turns crispy looking
  • Serve in plate

  3.) Carrot soup

Ingredients:

5 cups carrots, chopped

1 tbsp butter

1 tbsp virgin olive oil

1 onion, chopped

1 stalk celery, chopped

2 cloves garlic, chopped

1 tsp chopped parsley

2 cups water

4 cups vegetable broth

½ tsp salt and pepper

Instructions:

  • Heat butter and oil in pan wait until butter melts.
  • Add onion and celery, stir occasionally wait until softened then add garlic and parsley continue stirring
  • Add carrots, wait and then add water and broth and wait until cooked
  • Puree the soup in the blender, add salt and pepper.
